I've searched high and low for this answer, but cannot find it anywhere. If
there's a good site for this info, please let me know. Is there the
capability in Report Builder for the user to add "engineered fields"(like a
field that would hold a calculation....items * quantity).

Just click Ctrl+Atl+D to get the view fields for placing in the layout. on
the Dataset just Right click and click Add, there you can see "Computed
fields", in which you can select any field + - * etc.. rest I think you know
how to do it.
I would suggest, that bring all these computed / formatted etc.. in the
query itself.
